ST. JOHNSBURY - It's Valentine's Day and chocolates and flowers are flying off shelves, this means a time of giving, but also the busiest time of year for some business owners.

Paddy Cakes and Candy shop owner Cindy Poginy have been busy crafting a larger amount of handmade boxes of chocolates, chocolate covered strawberries and more, specially for Valentine's Day.

Poginy has been in this business for years and knows the preparation it takes for a holiday that is all about the delicious treats.  She starts by ordering an abundance of chocolate and supplies and makes batches of chocolates to stock up on.

Three days prior to Valentine's Day, Poginy and her employees hand dipped and decorated over 500 fresh strawberries.

Poginy said,"It's getting all the things prepared ahead that can be done ahead and just leaving the last minute touches for last minute, and then it's just having hands in for all the last minute work to be done."

Paddy Cakes is the only chocolate shop in the area, so there is a high demand for sweet treats this time of year.
