The spring season is coming upon us fast. Maple sugaring season is off to a great start with the unusual warm temperatures. The Goodwin Family Maple Farm in St. Johnsbury is taking advantage of the fantastic weather. Collecting the sap from trees and boiling down sap still continues to be a long process. Maple sugaring is an old Vermont tradition, but the method always advances and improves with technology. New tubes and filtration systems help to conserve more sap. This process increases the amount of production and cleans out any unnecessary minerals. Technology may make the process easier, but it takes a special kind of person to be in the maple syrup business. Neil Goodwin enjoys his job and says, “maple sugaring has to be in your blood.” The beginning of this season is already turning out to be better than they expected. Only time will tell soon what will come for this maple-sugaring season.
